This is called a vietnamese pizza and I was so intrigued to try it when I learned about it from @nutritionbykylie and @myhealthydish because you only need 3 ingredients and 5 minutes.

1. Heat a small nonstick skillet over medium heat. Add the rice paper on the dry heated skillet. 2. Once the rice paper starts to fold up, add the chili oil and one egg. Gently scramble the egg around with the chili oil until the egg is cooked. Add sliced green onions, parsley or any other toppings like kewpie mayo and/or sriracha. 3. Fold in half and serve immediately.
