These freezer pancake cubes are perfect for meal prep to have on busy mornings or for suhoor Ramadan mornings. Use any batter you like and just add a little extra cooking time depending on how thick they are. 🥞

What you need
vegan chocolate chips

berry mix

canola oil

tbsp unsalted butter

cup milk

brown egg

tsp salt

tbsp baking powder

tbsp light-brown sugar

cup all purpose flour
Instructions
1. In a medium bowl, whisk together the flour, brown sugar, baking powder, and salt. In another larger bowl, whisk the egg until blended. Whisk in the milk and melted butter, then whisk in the dry mixture until well combined. 2. Transfer the pancake batter to ice cube trays, about 2 tablespoons each. 3. When ready to cook, heat a large nonstick pan over medium heat. Spray with nonstick cooking spray. 4. Remove as many of the freezer pancakes as you’d like and cook until the pancakes are puffed on top and golden brown on the bottom, 4-5 minutes, then flip and cook on the other side until risen and cooked through, 1-2 minutes more. 5.
