Overnight Oats Pancakes

This looks like a regular overnight oats but then I add extra milk, flour and baking powder and turn them into overnight oats pancakes!

What you need

cup milk
cup skim milk greek yogurt

cup chia seed

tbsp maple syrup
tsp vanilla extract

cup all purpose flour
tsp baking powder

unsalted butter
Instructions
1. Whisk together oats, milk, greek yogurt, chia seeds, maple syrup, vanilla and flour until it comes together. Store in the fridge overnight. 2. When you’re ready to cook them, sprinkle them with baking powder and fold to combine. 3. Heat butter in a non-stick pan over medium heat. Add ⅓ cup of the overnight oats mixture to the pan and cook until bubbles appear on the surface and the edges begin to set, about 3 minutes. Flip the pancakes and cook until the other side is golden-brown, 3 to 4 minutes more. 4. Transfer the pancakes to a warm oven or plate. Repeat with the remaining batter.
